Regarding the man in the firy pot, I found on this
webpage a pretty plausible explanation:
"First Coat of Arms of the town was reproduced from the seal dated c. 1305-1334,
showing the man submerged partially in the pot engulfed in flames. According
to some this is "Syty Wit" (Fat Witt).Others identify the man as Saint
John in oil. There is no definitive documentation to support either claim.
The second hypothesis is more likely since it is mentioned in the records
of the local church. The Patron of the parish is Saint John the Evangelist."

According to my hagiography "Syty Wit" is Saint Vitus (died c. 300 A.D),
who was thrown into a kettle with boiling oil and emerged from it unscathed.
John the Evangelist did not suffer martyrdom. I didn't find another Saint
John to whom this story might apply.
