At both the north and
south gates, the flags of Canada, New Brunswick, Acadians, and the university
fly. The university flag consists of a simple logo of five parallelograms on a
white field. The two upper ones are gold, the three lower ones are blue. Since the
Université de Moncton has three campuses, I am guessing the three blue bars
might represent those.

Well, I had a cyber-wander around, just for fun, and found the official 'house-style' guide (PDF file). The PDF prescribes the colours of the logo as yellow: Pantone 131 and blue: Pantone 288. CMYK equivalents are given and also RGB ('RVB') as yellow : 215%:165%:46% and blue: 32%:76%:138%. The "%"s are [sic], though they don't make much sense. Treating them as proportions of 255 gives colours which are very similar - but not identical - to what appears in the PDF documents.
However, it's all pretty academic (no pun intended), since I also found

which includes a pretty picture of the flag flying. It shows colours which are different from
the prescribed colours and the colours as they actually appear in the
style guide document.
